I think about the easiest thing for a beginner/hobbiest/occasional user has to be a flux core MIG. It works well outside in windy environments, is more or less point and shoot, can handle dirty and painted metals, you can buy wire and tips just about everywhere...etc etc etc. As Time goes by you can add the tank with gas and some units can convert to TIG later on for more functionality. It takes a couple of hours of practice to get the bacon sizzle tuned in but it is pretty easy to learn....my $.02.
