I understand...but if you ever wanted to be a leg man I have the answer. Down here we can only shoot gobblers and the leg and thighs are often thrown away because they so tough. What I do now, and it is absolutely delicious, about 10pm I get out the slow cooker, season the parts up and put them in the slow cooker along with some turkey gravy and some chicken bullion you can add a can of cream of mushroom or celery soup if you desire or anything you like. Leave it on all night on low. The next morning the whole house will smell like Thanksgiving but the parts will still be so tough you can't stick a fork in them. Then about 12 noon they will absolutely fall apart you can pull out every bone. Turn it down to warm and then at dinner time make pot of wild rice and you will have a meal fit for king. Good leftovers too, I have done it many times.
