On the consumer version of Windows 10, you can only pause them for 35 days (Settings>Update and Security>Windows Update>Advanced Options). Once you've passed the 35 day limit, you have to update before you can set another 35 day pause.
If you want to get creative, then you can try to disable two services: Windows Update and Windows Update Medic Service. There have been some rumblings that the Windows Updater is able to reset the services and turn them back on as needed.
There are also some third party tools that can disable updates, a simple internet search should be able to find them.
If you have Windows 10 Pro, then you can do it via the registry or group policy.
