5' Brush Hog is most common, 6' for finish mower is perfect. Mowing grass for your lawn works in 2nd Gear best. 3rd Gear will work if grass isn't too high and you have sharp blades. If not you can get uncut and patchy spots. Brush hogging is best to go slow in 1st if venturing into tall unknown territory and you should do a walk thru first to assess if any hidden objects can obstruct and/or damage equipment. If using a tried and true field, 2nd gear works fine. I wouldn't go any faster with a brush hog. Fuel economy will vary according to workload and ground speed too so if using 1st gear you will consume more fuel and cover less area. It's a trade-off. Spending more time and more money on gas is better and cheaper than trashing your hog or mower.
